Lokamo's Simple Granola Recipe:

Ingredients:

  • 2 cups rolled oats
  • 2 cup mixed nuts (almonds, cashews and hazelnuts, or your preference), roughly chopped
  • 1/2 cup seeds (pumpkin, sunflower, or a mix)
  • 1/2 cup shredded coconut
  • 2 tablespoons maple syrup
  • 1/4 cup of olive oil
  • Sprinkle sea salt to taste
  • 1/2 cup chopped dates (cranberries, raisins, apricots of your choice are also good)

 

Instructions:

  • Preheat and Prepare:
    • Preheat your oven to 325°F (163°C).
    • Line a baking sheet with parchment paper.
  • Mix Dry Ingredients:
    • In a large mixing bowl, combine the rolled oats, mixed nuts, seeds, and shredded coconut.
  • Prepare Wet Ingredients:
    • In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt until well combined.
  • Combine Wet and Dry Ingredients:
    • Pour the wet ingredients over the dry ingredients and stir until the oat mixture is evenly coated.
  • Spread on Baking Sheet:
    • Spread the granola mixture evenly on the prepared baking sheet, pressing it down slightly to create a uniform layer.
  • Bake:
    • Bake in the preheated oven for 25-30 minutes or until the granola is golden brown, stirring halfway through to ensure even cooking.
  • Add Dried Fruits:
    • Remove the granola from the oven and let it cool slightly. Once cooled, stir in the dried fruits.
  • Final Touch:
    • Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.
  • Store:
    • Once completely cooled, transfer the granola to an airtight container for storage.
  • Enjoy:
